Burdock Root (also known as Gobo Root) can be used in a wide range of drinks and food dishes. Most people know it as a main ingredient in the drink Dandelion and Burdock. But Burdock Root can be used in soups, stews and stir fries, offering a sweet mild flavour. For tea: grind then add 1 teaspoon per cup of water and simmer for 20 minutes before straining.

It is also commonly used in a tea, and should be ground, and 1tsp should be added with a cup of water, simmered for 20 minutes, before straining and drinking.

 

The root comes from the burdock plant, which is grown across Asia, Europe and North America. Burdock can grow up to 10 feet tall, 3 foot wide, with roots going up to 3 foot deep. The root is often harvested in the first year, as this is when Inulin levels are at their highest.
